Summer is coming our way, and this year I’m feeling like celebrating! There’s a special magic in summertime.

All of the sunny days, kids splashing in the sprinklers, a slower mentality that makes space for lots of time with friends and family. I love easy meals on the barbeque accompanied by a summery, refreshing cocktail.

And this one is really delicious!

A Delicious Watermelon Cocktail

There’s a special place in my heart for the watermelons during the summer. To me, they’re the perfect summer food.

I love that watermelon chills well and helps you stay hydrated — not to mention the fact that our kids are the most happy when you hand them a huge slice of watermelon and send them into the backyard to get messy while they eat it!

Watermelon also lends itself particularly well to cocktails! The juice acts as a natural mixer and sweetens a drink just the right amount.

In this cocktail, the watermelon and rosemary combination makes a beautiful botanical flavor that goes really well with vodka or gin.

So we whipped up this little punch recipe for your summer celebrations, so that we can all say cheers together! It’s a perfect, simple recipe to bring people together for a laid back warm weather gathering.

Substitutions to Try

Once you get the hang of mixing up our Rosemary Watermelon Cocktail, don’t be afraid to try some substitutions! It’s a great cocktail to play around with and mix in new things.

Here are a few ideas to get you going:

  • I recommend starting with vodka, but you could also try gin as your base liquor! It changes the feel of the Watermelon Cocktail from a party drink to something a little more refined.
  • If rosemary isn’t your thing, you can leave it out completely! You could also substitute in basil or thyme.
  • Try different fruits! I’m thinking summer peaches or strawberries could be delicious. You may have to add a little extra water to the blender to smooth out a more pulpy fruit.

When to Serve

Our Rosemary Watermelon Cocktail is completely lovely because it’s great to serve on so many occasions! You can dress it up or down, for laid back hangouts or more formal events like showers and even summer weddings.

A few ideas of when to serve:

Wedding or Baby Showers. Use this Rosemary Watermelon Cocktail to serve guests at a shower! To make it virgin for a mom-to-be, just leave out the alcohol and add some sparkling water.

Weddings. Call this your signature cocktail! You can even give it a cute name that ties into your wedding theme.

Backyard Hangouts. Mix up a batch ahead of time (see instructions below) and serve to friends in your backyard.

Remember to always drink responsibly and only if you’re 21 or older.

Making in Large Batches or Ahead of Time

This is a cocktail that’s easy to double or triple and serve in a large batch! Making it ahead of time will save you time and trouble on the day of an event.

The recipe below makes 8 servings. To serve more people, simply double the recipe. This will make you 16 servings. Make larger batches accordingly.

It also is a great make-ahead cocktail. Just complete the recipe and store it in a large pitcher or jar in the refrigerator. Before you serve, give it a stir to mix in any sediment that has gathered at the bottom of the pitcher.

  1. To start, cube your watermelon and squeeze your lemons. Remove the leaves from 4 rosemary sprigs and chop coarsely. Add watermelon, lemon juice, rosemary, and sugar to a blender and puree for about 30 seconds. Once blended, strain the mixture to remove all rosemary and watermelon pulp. (You can make this part the night before your party and chill it so it’s ready the next day!)
  2. In a pitcher, mix 1 1/2 cups of watermelon vodka (or your preferred spirit) with 2 1/2 cups of your pureed watermelon mixture to create the watermelon cocktail.
  3. Pour a half cup of your cocktail mixture over ice, top with club soda, and add a sprig of the extra rosemary for garnish.
