

It’s Wednesday, and that calls for a celebration! How about waffle cake? After Mr. Lovely asked for a good ol’ fashioned Funfetti cake for his last birthday, I got to thinking that it might be delicious in waffle form. And lucky for us all, I was riiiiiight! This Funfetti waffle cake is like a breakfast and a birthday party got married and had the most delicious baby you could imagine. And I secretly love it because it’s like an instant-gratification baking project — you don’t have to wait for cakes to bake and rise and worry whether they’ll stack right. You can’t mess it up!

Ingredients
- 1 box Funfetti cake mix
- 1/2 cup water
- 1/2 cup vegetable oil
- 3 eggs
- cooking spray
- whipped frosting
- whipped cream
- sprinkles
Make Time: 20 Minutes
Step 1: In a bowl, combine the cake mix, water, oil, and eggs. Beat until smooth.
Step 2: Heat your waffle iron and spritz with cooking spray. Spoon in the cake mixture until the waffle iron is about 2/3 covered. Close the lid and let the waffle cook. Once cooked, remove carefully with a spatula and fork.
Step 3: Repeat Step 2, making about 6-7 waffles.
Step 4: On a cake stand, place your first waffle. Spread a thin layer of frosting on the top. Stack another waffle and frost. Continue stacking and frosting until your final waffle is on top; leave this one unfrosted.
Step 5: When you’re ready to serve, cover the top of the cake with whipped cream and sprinkles. Cut into slices and enjoy!
