This pumpkin smoothie recipe is perfect if you love fall flavors but it’s still warm out! It’s also a nutrient-packed, quick, healthy breakfast or snack idea. Add this recipe to your fall rotation and it’s sure to become a favorite!

A few years back, I had gotten into this really awesome habit of making myself a green smoothie every morning. I loved it.

It got me a few servings of fruits and veggies right away, but more importantly it made me start my day with a kind of intention that isn’t involved in pouring a bowl of cereal. There was something nice about getting to know the ingredients so well I didn’t need to measure any more, and about pouring it into my favorite glass, and taking some time to put thought into what the day would be like while I sipped.

Then, I got pregnant. And suddenly those smoothies were disgusting. All I could really stomach in the morning was bread or cereal. And I went down a cereal shame spiral.

Making Smart Breakfast Choices

Fast forward a few years, and I’ve luckily worked my way out of that cereal shame spiral.

Not that there’s anything wrong with cereal! Sometimes there’s nothing I love more than a big bowl of Honey Nut Cheerios (hello, reliving my youth much?).

But I do know that a bowl of cereal in the morning just doesn’t cut it for me. I’m hungry again shortly after I finish eating it, and it gives me a pretty major sugar rush followed by a lethargic crash.

So. I try to make smarter choices (for me, as we’re obviously all wired differently) for breakfast. Most days it’s oatmeal, or a veggie scramble, or a gool ol’ smoothie.

Enter: the pumpkin smoothie. We live in a part of California where it’s basically summer until November.

So while all of the world is in pumpkin spice heaven, we’re still over here sweating and wishing for weather that’s not in the 90’s.

And that’s partly why I wanted to experiment with this pumpkin smoothie recipe! It checks three boxes — a nutrient-filled breakfast, those delicious fall flavors, and something that’s still cool and refreshing on a hot day.

Ingredients for a Pumpkin Smoothie

There’s a little bit of everything in this delicious smoothie recipe — fruits and veggies and their nutritional bonuses, chia seeds for fiber & a little protein kick, and coconut water with bunches of electrolytes (and as much potassium as banana. Did you even know that?!).

If I want to give it a little extra boost sometimes I’ll even toss in a scoop of vanilla protein powder. The flavors work together really well.

Ingredients

  • 1 cup coconut water
  • 1/2 apple, diced into large cubes
  • 1/2 c pumpkin puree (from a can is just fine!)
  • 1 tbsp chia seeds
  • Stevia (one pinch or to your liking)
  • Cinnamon (one pinch or to your liking)
  • Nutmeg (one pinch or to your liking)
  • Sea salt (one pinch or to your liking)
  • Vanilla (one pinch or to your liking)
  • handful of ice
  • optional: 1 scoop vanilla protein powder

Toss all of your ingredients into a blender and blend away. It’s seriously that simple!

Substitutions and Other Ideas

If you like, you can chill the pumpkin puree and apple ahead of time to make your pumpkin smoothie extra frosty and thick.

If you don’t have apples on hand, pears also work really well as a substitution.

Pumpkin pie spice can be substituted for the cinnamon and nutmeg.

You could add a scoop of powdered collagen to it instead of (or in addition to) protein powder for some additional health benefits.

I’m loving this recipe particularly because most of the measurements are not exact. Not a lot of measuring spoons needed here. In fact, I’m mostly eyeballing it these days.

Maybe you like it heavy on the cinnamon, or a little less sweet. Experiment to see what works best for you!

  1. This sounds delish! I used to be the same way, but I didn’t get pregnant, I just got bored. No matter what I put in my green smoothies, they all started tasting the exact same and it wasn’t a taste I enjoyed anymore. I keep spotting new recipes to try, but haven’t gotten around to it! I like the way this one sounds because now that it’s getting a liiiiiiittle more chilly in Texas (and by that, I mean we have a high of 78 today), I’m ready to finally start busting out fall flavored things. I’ll have to give this recipe a go since I already have most of the ingredients at home!
