Mean Girls Day is Coming. Make Cookies!
Let me tell you something about Janis Ian. No but seriously, Mean Girls Day is next week! I don’t usually get behind the whole made-up-holiday thing, but October 3rd must be celebrated. And if you don’t have any Kalteen Bars handy, I’m thinking that you should probably just make cookies for Mean Girls Day. These are just like our Elf Christmas Cookies, but I learned a few new tricks and perfected the recipe for you, so read on for the how-to!
Ingredients
1 cup soft unsalted butter
2 ounces cream cheese, at room temperature
1 cup sugar
1 large egg
1 1/2 teaspoon pure vanilla extract
3 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
Additional Materials
- cookie imprinting set
- neon food coloring
- rolling pin
- round cookie cutters
- stand
or hand mixer
- silicone baking mat
or parchment paper
Step 1: Use a stand or hand mixer to cream together the butter, cream cheese, and sugar until fluffy. Then beat in the egg and vanilla extract.
Step 2: Mix all dry ingredients together in a separate bowl. Once mixed, gradually add them to your wet ingredients until thoroughly mixed and a soft dough is formed.
Step 3: To color your dough, separate it into as many balls as you would like different colors. Add a drop or two of color to each ball and knead until the color is evenly spread throughout the dough. For our pink color, we used 2-3 drops of neon pink. And for our peach color, we used this gel food coloring.
Step 4: Wrap individual balls of colored dough in plastic wrap and chill in refrigerator for an hour.
Step 5: On a clean surface, sprinkle some flour and set down a chilled dough ball. Flour your rolling pin and roll out the dough to about 1/4″ thick. Use cookie cutters to cut out your cookies. Tip: Place the cut out cookies directly onto a baking sheet covered with a silicone baking mat or parchment paper. This will help later when you add the words. Place your cut-out cookies back in the fridge, uncovered, to chill for another 20 minutes.
Step 6: Preheat your oven to 350. Once your cookies are chilled, take them out and start making words! Decide on your favorite Mean Girls quotes and go to town. For these, I like to press the letters in one at a time, starting with the letter in the center of your line and working your way outwards to ensure that the spacing is correct. So before you press any in, count up how many letters and lines of text you have and calculate which letter will be center. Start there and work out.
Step 7: When you’ve got all your words down, bake your cookies! These bake pretty quickly — mine took 7 minutes. Check them around 6 minutes or so, because they can burn fast.
