We’re up to our old gin cocktail tricks, and this time it’s a beautiful one!

I think you’re going to absolutely love this specialty cocktail. It’s a colorful take on a gin fizz, with creamy foam and a secret ingredient that gives it a beautiful purple tone and an elevated flavor.

Our Butterfly Gin Fizz has a lovely, light flavor, perfect for springtime. The gin is beautifully balanced with a bit of bright citrus, a bit of simple syrup, and a floral note from our secret ingredient: butterfly pea tea.

Top it off with a frothy layer of foam for an extra special touch.

The Secret Ingredient: Butterfly Pea Tea

Have you heard of butterfly pea flowers? The butterfly pea plant is a vine plant with vibrant purple flowers.

These flowers are often harvested, dried, and used to brew tea or in other dishes. The coolest thing about the flowers? They can create a color-changing effect when combined with citrus.

When you brew a batch of butterfly pea tea, it actually brews a lovely deep shade of blue, like the image below.

But when you add citrus to the tea, a little science comes into play. The acidity of the citrus changes the pH level of the liquid and turns it from blue to purple, and sometimes even to a light pink!

The flavor of the tea is mild, somewhat floral, and enjoyable. It’s often compared to a chamomile, although I find it a little more earthy.

Ingredients You’ll Need for A butterfly Gin Fizz

So now that you know a little about our star ingredient, let’s talk about what else you’ll need to create this light but luxurious cocktail.

Butterfly Pea Tea. The star of the show! The butterfly pea tea gives the cocktail a hint of a floral feel, and mellows out the flavor of the gin just enough.

Gin. I recommend a mid-range bottle that mentions citrusy notes (as opposed to a very juniper-heavy gin). A bottle with a fresh, light flavor will bring out the other ingredients in this cocktail perfectly. But when in doubt, just use what you’ve got!

Lemon Juice. Fresh lemon juice can’t be beat!

Simple Syrup. We like to keep a bottle of simple syrup in our refrigerator for cocktail creations like this one. Just keep an eye on the expiration date.

Egg Whites. If you’d like to add that lovely layer of foam, you’ll need one egg white per cocktail.

How to Create a Fizz Cocktail with Egg whites

Every once in a while, I just love using egg whites on a cocktail (like our Bourbon Apple Cider!). The frothy foam created by the egg whites really elevates a drink.

If you’re using egg white, be sure you do a dry shake in the shaker before adding ice. This means that you’ll add all of the ingredients without ice, shake for 30 seconds to create the foam, and then add ice and shake to chill the drink.

Make The Butterfly Gin Fizz Cocktail Recipe

Ingredients

  • 2 oz gin
  • 1 1/2 oz butterfly pea tea
  • 1/2 oz lemon juice
  • 1/2 oz simple syrup
  • 1 egg white
  1. Start by brewing your butterfly pea tea. I recommend doing this ahead of time and keeping it in the refrigerator for when you’re ready to mix your cocktail. I used two teabags in about 16 ounces of water. Brew the tea and let it chill or come to room temperature.
  2. Add all of your ingredients to a cocktail shaker without ice. Shake vigorously for about 30 seconds. This will create a frothy foam from the egg white.
  3. Add ice and shake again, just enough to chill the drink.
  4. Pour through the cocktail strainer into a glass.
  5. Add a garnish if you like, and enjoy!

try It Without Foam

If egg whites aren’t your thing, no problem! The Butterfly Gin Fizz cocktail is just as delicious without the foam.

Simply add all of the ingredients, minus egg whites, to a cocktail shaker with ice. Shake and serve.

You could serve this on the rocks in a rocks glass, or up in a chilled coupe. Add your desired garnishes and enjoy.
