Grilled Pineapple Plank Tilapia

You guys, summer is my favorite. The swimming, the sun, the fresh fruits, the backyard barbeque parties, I love it all. And more than anything I love the smell of somebody grilling. Mr. Lovely made up this sort-of-fancy-but-mostly-easy recipe to celebrate what feels like the beginning of summer here in LA, and I can fully attest to its deliciousness. And here’s something crazy — if you want to get your summer on but don’t have a grill of your own, you should pop into an Old Navy store on Memorial Day weekend, because every Old Navy in the country is giving away a Weber grill. What?! Yeah. Let’s cook.

Ingredients

1 fresh whole pineapple
2 frozen tilapia filets
soy sauce
sea salt
pepper
olive oil
baker’s twine

Prep Time: 10 Minutes
Grill Time: 30 Minutes

Start by cutting the pineapple to prepare the planks. Cut the top and bottom off. Then slice off the four sides of the remaining pineapple. Cut the sides so that some of the fruity flesh remains on them; that way the juices will really help marinate the fish as it cooks.

Take the tilapia (still frozen) and coat both sides of each filet with a light layer of olive oil (we used our Misto to spritz it on). Then season both sides of each filet with soy sauce, salt, and pepper — a light sprinkling of each should do it.

Sandwich each filet between two pineapple planks and tie together using baker’s twine.

Place on the grill with medium to high heat, depending on your grill. These will cook slowly because the fish is frozen, so be patient! Ours took about 30 minutes. When the pineapple looks dehydrated and somewhat blackened, test the fish to see if it’s ready.

That’s it! Untie the planks and serve your pineapple tilapia over some jasmine rice or whatever is your favorite. It was perfect with the leftover fresh chunks of pineapple. Delish to the mish.
