One of my very favorite things about California in the summer is going to fruit stands. The other day, Mr. Lovely and I went on a fruit stand mission, and stumbled upon one with some major zucchini. They were marked two dollars, so we picked a good one and took it to the cashier. It was the end of the day, and the owners were trying to get rid of all of their extras, so the two dollars bought us not one, but four zucchini! We were pretty stoked — until we got home and realized that we had to figure out something to do with all of it. So far, it’s been zucchini medallions, zucchini spears, and zucchini bread. Anyone else have any brilliant ideas? Hit me with your best zucchini recipes, Lovelies! xoxo
I grate the zucchini and freeze it for use in sauces and soups for the cooler months.

You can make zucchini brownies! Aaron and I made them once. They are vegan! I’ll try and email you the recipe. It’s something to try once in your life!

Zucchini pancakes. Julienne the little beauties, then mix with flour and water in a 1:1 ratio until you have something of a paste that will hold together. Fry ’em up on on the stove with a little salt’n’pepper (like you would hash browns). SO GOOD. Best recipe I’ve had this year.
