pumpkin mini muffins

Geez, am I predictable, or what?  After getting a box of pumpkin bread mix from Trader Joe’s and doing a little bit of baking, I decided to do a quick post about it — and then I remembered I did the exact same thing last year!  So sorry for the repetition, but at least this time we’re making mini muffins instead of a loaf of bread.

In any case, if you ever need something delicious to take to a fall shindig at a friend’s house, just grab that good ol’ box of pumpkin bread mix in the baking aisle at TJ’s and bake it up.  It’s so easy you could do it with one hand tied behind your back, and it’s always a hit.  And since they’re mini muffins, you can have two (or three?) and not feel so bad.  Okay, have four.  xoxo

  1. I once found a recipe for low-cal muffins. Two ingredients: a can of pumpkin, and a box of yellow cake mix. Now if I could only remember the baking time…

  2. I’m normally anti-baking mix but that Trader Joe’s mix is amazing! Like the other reader, I totally stock up!
