Have you ever met a kid who didn’t like popsicles? Well, let me introduce you to my children. I’m not sure if it’s exactly that they don’t like them, but I think they don’t quite know what to do with them. We tried popsicles like crazy when Hank got his tonsils out and he just wasn’t having it! So I’m on a mission to make some healthy popsicles that are undeniably delicious so that my kids will start liking them. Because when a kid has a sore throat, you just gotta rely on a popsicle or two. Hence, my latest recipe: how to make piña colada popsicles.

These are creamy (even though I can’t stand that word, ugh, it’s the only way to describe them!), refreshing, and taste like summer. And they only have five ingredients, which I love also. I whipped up this batch in about 5 minutes, so if you’re looking for something simple to make, these are right up your alley.

How to Make Piña Colada Popsicles

Ingredients

  • 1 can (13.5 oz) coconut milk (we used whole fat, which you could substitute for lite, or even coconut cream)
  • 1 cup plus 2 tablespoons crushed pineapple
  • juice of 1 lime
  • 5-6 mint leaves
  • optional: 1 tablespoon sugar (we used organic cane sugar)
  • optional for the 21-and-over crowd: 2 oz rum

Instructions

Combine the coconut milk, 1 cup of crushed pineapple, lime juice, and mint leaves in a blender. Blend until smooth. Give it a taste, and if you like it a little sweeter add the tablespoon of sugar and blend again. Lastly, if you like larger chunks of fruit in your popsicles, add in the additional 2 tablespoons of crushed pineapple and stir in gently.

Pour the mixture into your popsicle molds and add popsicle sticks if necessary. Freeze overnight or until completely frozen.

I’m writing this before my kids have actually tried these, so the jury is out on whether they’ll be a new fave! But I just ate one and I’m having to stop myself from having another, so I can definitely vouch for how good these are. Perfect for summer afternoons in the backyard! xoxo
