I’ll admit it — I have approximately zero Irish in me. I can claim a little bit by marriage, but even my husband isn’t too tied to his Irish roots.

But something we do love? Irish whiskey.

And if there was ever a day to use it, I’m pretty sure it’s St. Patrick’s Day. So we got a little creative and made you a St. Patrick’s Day cocktail that you can whip up on March 17th (or any time, let’s be real)!

We’re calling it the Golden Irish Mule, and it’s the prettiest little St. Patrick’s Day drink I’ve seen. Spoiler alert: there are edible gold flakes in this beauty, guys. And if that’s not the pot of gold at the end of the rainbow, then I don’t know what is!

I have to say, I’m pretty partial to the edible golden ice cubes in our Irish Mule cocktail recipe. It’s a fun way to customize the drink for a special occasion.

Irish Whiskey in a Mule

Traditionally, a mule cocktail contains vodka, making it a Moscow Mule. But you can substitute just about any liquor to create various drinks in combination with the ginger beer!

When choosing an Irish whiskey for your Golden Irish Mule, just select your favorite. You can never go wrong with Jameson, but use what you have on hand or something that you’d like to experiment with.

The Best Ginger Beer for Mule Cocktails

Before we get into the actual recipe, it’s probably smart to talk about ginger beer.

For me, it’s the ultimate cocktail mixer. I love ginger beer with just about any liquor, and you can dress it up in so many different ways.

I think that the specific ginger beer can make or break a cocktail, and for our Golden Irish Mule, I really like Reed’s Ginger Beer. We find ours at Trader Joe’s, but it’s also on Amazon.

I like it for this cocktail because it’s not overly spicy but still very flavorful, and it plays with the whiskey just perfectly.

For other cocktails, it might be fun to experiment with a spicier ginger beer to bring out various flavors.

Make Ice Cubes with Edible Gold

Now let’s get the gold going!  Start by making your golden ice cubes.

And yes, there are gold flakes that you can actually eat! (Remember Goldschlager, anyone?)

For larger ice cube trays, place one sheet of gold at the bottom of each mold and gently fill with water. For smaller trays, fill with water first and place the gold sheets on top of the water so that the gold grabs on.

Place trays in the freezer until thoroughly frozen.

A note: you’ll find a basic silicone mold for your ice cubes right here; these are square-shaped molds and work just fine. But a quick search on Amazon will turn up silicone ice cube trays in a zillion different shapes and sizes, so if you want some fun custom ice for your edible gold, look around a bit.

In fact, here’s a silicone mold with shamrocks, pots, and leprechaun hats if you really want to go all out.

Ingredients You’ll Need for a Golden irish Mule Cocktail

The Irish Mule cocktail is incredibly easy to mix for yourself at home! You just need a few ingredients to make it great.

Irish Whiskey. Find a great Irish whiskey like Jameson or Tullamore D.E.W. You might find that some whiskeys are smoother than others, but the ginger beer will mellow out any whiskey that’s too potent.

Ginger Beer. Reed’s is our favorite for this recipe! It’s easy to find online or in your local stores (try Trader Joe’s). It also contains the perfect amount of spice for this recipe. It’s not too spicy but far from bland, and has just the right amount of carbonation.

Lime Juice. As with any cocktail, freshly squeezed fruit juice will yield the most lovely cocktails! Squeeze your lime juice fresh for your cocktail for the best results.

Edible Gold Leaf. It’s not absolutely necessary, but it sure does take the Irish Mule to the next level! Try some edible gold leaf to make your Irish Mules golden.

Silicone Ice Cube Trays. These come in handy if you want to use your edible gold leaf in your ice cubes. Use the silicone ice cube trays to make golden ice that will slowly add golden confetti to your cocktail!

Golden Irish Mule Cocktail Recipe

Ingredients

You ready for that drink? Here are the easy steps to make yourself a Golden Irish Mule.

  1. Once frozen, add a few golden ice cubes to a rocks glass.
  2. Over the ice, pour two oz. Irish whiskey.
  3. Fill with ginger beer.
  4. Next, squeeze in half a lime. Garnish with a lime wedge. As the ice melts, expect to see lots of golden flecks floating around in your cocktail!

Adjusting Taste and Alcohol Content

If you’d like your drink to be a little less strong, cut back to one ounce of whiskey and make up the difference with ginger beer.

I love to use two ounces because I like the taste of the mix that way. I find that it can be a bit overly sweet for me with only an ounce of whiskey.

If you want less whiskey but don’t like your mule cocktails too sweet, consider adding a bit of soda water to the mix to taste.
