Fresh Pineapple Lemonade

I’m on a lemonade bender! I keep bringing home bags of lemons from the market and doing fun summery experiments. This fresh squeezed pineapple lemonade is the best of all summery worlds — a little tropical, a little tangy, and a whole bunch refreshing. It took me about 20 minutes to make with just our little hand held citrus squeezer, and we were sipping this stuff in no time.

Ingredients

  • 2 cups fresh squeezed lemon juice (about 12 lemons)
  • 2 cups fresh squeezed pineapple juice (about 1 large pineapple)
  • 4 cups water
  • 1 cup sugar

Fresh Pineapple Lemonade

Step 1: Cut all lemons in half and cut the pineapple into large chunks (removing the skin).

Step 2: Juice all lemons with the citrus squeezer. Do the same with the pineapple! I found it to be way faster than blending and straining. Just put a couple of chunks into the squeezer and squeeze as if it was a lemon. You can fold the remaining pulp in half and squeeze again to get excess juice out.

Step 3: Combine all ingredients in a large pitcher and stir to mix sugar. Chill in refrigerator; serve over ice.

That’s it! I like my lemonade pretty tangy, so this is perfect for me! If you like it on the sweeter side, try adding an extra 1/4 cup of sugar. Or you can pour 2/3 of a glass over ice and fill with club soda to make it a sparkling pineapple lemonade, which is extra delish to the mish. I have to tell ya, folks, you’re missing out if you don’t try this one! Happy squeezing! xoxo
