fabulous fall

It’s an autumn-tastic weekend here in our little Washington Heights apartment.  I’m heading to my Bestie’s apartment later tonight for dinner, and my assignment was to bring something sweet for afterwards.  My solution?  Some Trader Joe’s pumpkin bread!  Yes, it’s a pre-made mix in a box, but the fact that you get to add eggs, oil, water, and pop it in the oven makes ya feel a little more domestic, ya know?  And bonus — your house smells amazing for the afternoon.

In related news, I picked up two apartment-friendly (read:  small) pumpkins this week, to do a little carving.  What should we carve on them?  We’re pondering an owl on one and a moustache on another, but we’re open to suggestions!  Leave a comment if you have a fab idea.

And finally, I snagged a butternut squash at the market and I’ve got an itch to make a butternut squash soup from scratch.  We’ll have to see how that one goes — I have a feeling it’ll either be brilliant or a complete disaster, but nothing in between.  Stay tuned for The Great Butternut Squash Extravaganza of 2010.

Dave and I had spaghetti squash last weekend — something I had never had before — I was in AWE of how truly spaghetti like it was, how tasty it was with the homemade tomato sauce I whipped up, and how calorically awesome it was — only 1 point for a huge serving! Needless to say, I am a convert. Squashes are my new superfood.

  5. This looks so yummy! Butternut squash soup is delicious (and easy) – you should definitely go for it. Butternut squash is my little one’s favorite food, so we’ve always got some around.

  7. Awesome! Funny – guess what we did today? We made the same thing, but in little mini bundt pans ~ and half of them had chopped honey crisp apple in them! Yum. Have you ever tried roasted butternut squash? Peel, cube, 1-2″ cubes toss in olive oil and roast in oven. Soup is really good too!.

I want our pumpkins to last past halloween, so I am not planning to hollow them out, but instead just etch leaf patterns onto the skin. Secondly, the Parade magazine in today’s paper had a butternut squash soup recipe that seems worth trying.
