Before we had kids, we traded homes with a lovely Parisian couple and spent almost a month exploring Europe. One of the places that I’m so glad we went was Brussels.

And one of the most memorable things about our time there? The waffles. No kidding.

Taking a bite of one of those fluffy, sweet, sugar-dusted waffles as you wander the cobblestone streets of Brussels is magical.

There is something special about those Belgian waffles from Brussels, and when we came back I was chasing recipes to try to recreate it.

I think I got pretty close.

Are These Belgian Waffles?

While I don’t claim to capture the magic of the cobblestone streets and charming European alleyways, this recipe gets pretty darn close to the delicious flavor and texture of a Belgian waffle.

In my opinion, the mixing of the egg whites in the recipe really makes this easy waffle recipe stand out from a standard box mix or other preparation techniques.

And aesthetically, Belgian waffles in Brussels are often rectangular in shape and served with a dusting of powdered sugar. So we used our rectangular waffle iron and did the same!

What are Liège Waffles?

Well, they’re delicious, for one thing. Liège waffles, more traditional in the Belgian province of Liège, have a couple of notable differences from our easy Belgian waffle recipe.

Most importantly, Liège waffles are made with pearl sugar mixed into the batter. Once cooked, the pearl sugar remains intact in little clumps inside the waffle, so that every so often you get a bite of a crispy little sugar bomb.

They also tend to have rounded edges and crispy outsides.

You may have a preference for one or the other but you really can’t go wrong either way!

Ingredients for our Easy Waffle Recipe

But today, we’re getting our easy waffle recipe into your kitchens and on your plate! Here are the ingredients you’ll need.

Ingredients

  • 2 c flour
  • 3/4 c sugar
  • 3 1/2 tsp baking powder
  • 2 eggs
  • 1 c melted butter
  • 1 1/2 c milk (we use skim, because that’s what’s usually on hand)
  • 1 tsp vanilla
  • topping options: berries, powdered sugar, syrup, etc.

How to Make Easy Belgian Waffles

  1. Combine all dry ingredients (flour, sugar, baking powder) in a bowl and mix lightly.
  2. Separate your eggs and set the whites aside; in one bowl, gently mix the yolks by hand for a few seconds.
  3. Add milk, butter, and vanilla to the yolks and stir to mix.
  4. Combine wet and dry ingredients and mix until smooth. The consistency will be a bit soupy at first but it tends to set up after a minute.
  5. In a separate bowl, use a hand mixer to beat the egg whites into a froth until you have soft peaks forming. Fold the egg whites into the rest of the batter until combined.
  6. Spoon a generous amount of batter into your waffle maker and cook according to your own maker’s instructions. I find that this batter needs an extra minute or so in the waffle iron.

Take out your waffles and add your favorite toppings! These tend to be pretty sweet, so we stay away from the syrup and just do berries or a sprinkle of powdered sugar.
